vegan cooking successes: the ongoing saga (thinking of all the good food I'd like to be eating)

According to the internet, it's a balmy –2 degrees celsius in outside, but we are (or at least were) in the midst of another winter storm. Seems like the perfect day to hole up inside and bask in the warmth of the oven or stove and stir up some serious comfort food. Especially since I seem to have caught my first cold of the season. Only, thanks to the sneezes and other (minor) viral nastiness and the rather dismal state of my larder, I don't feel much like cooking. So instead, I've decided to reminisce about some of our kitchen successes of the past (many) months. It's about time I updated the food part of this blog, anyway.

For some reason, March seemed to put me in the mood for posting good recipes that we've tried. Since then? Well, we've still been eating. And we have tried out a few new recipes over the past few months. All were definitely edible. Some were even delicious!

I've finally decided it's time to start catching up on the recipe posting – starting off with what I'll call the "Heavy Metal Adam's birthday extravaganza" meal.

(I should qualify what I mean by "extravaganza" here. It's not often I cook by myself, so if more than one thing emerges from my efforts, and none of it was pre-made, and it tastes good, well, that qualifies as an extravaganza in Laura's cooking terms.)

March comfort food

I'm not sure anyone really needs an excuse to seek out comfort food. But if an excuse is needed, this March (with its crummy weather and various other minor and not-so-minor afflictions and catastrophes) is as good as any. We've had great success with two comfort food recipes lately, so I thought I'd share.

best vegan mac'n'cheese I've tried yet

Because I know so much about cooking, and because the world needs another vegan recipe blog (yes, I'm being sarcastic) I've decided to start posting recommendations - cataloguing the best vegan recipes on the net that are sent my way or grab my attention. It's mostly to keep a record for myself, but if anyone else gets any good out of these suggestions, all the better.

Our most recent stunning success is called "Baked Mac Oh Geez." I found the recipe at a site called Chocolate-Covered Katie, but Katie reprinted the recipe from a cookbook called Let Them Eat Vegan. I'm not sure if it was the pictures that sold me, Chocolate-Covered Katie's endorsement (backed up by her claims to be a mac-n'cheese devotee), or simply the fact that it looked reasonably simple to make...

As the weather gets cold and autumnal (I'm ignoring the fact that, despite the rain, it was actually kind of warm in Hamilton today), it's nice to recall warm summer evenings spent dining and drinking in the back yard with friends.
